Cheesy Buffalo Chicken Bake

Because of our budget we do a lot of chicken around here, and because of my hubby’s fondness for Frank’s Hot Sauce, I have gotten pretty good with adding a Buffalo flavor to just about anything. Plus, pasta and cheese are the two ingredients that are almost always available in this house.  Those three things makes it very easy to throw together something quick when the leftovers are using all my plastic food containers and there is no longer shelf space in the fridge.

The best part about this recipe is you can bake it as a casserole, make it in a pot on the stove or toss everything except the pasta in the crock pot for later. This can be made any way you like and with just about anything you like.

Cheesy Buffalo Chicken Bake

Things you will need:

  • 2 cups Shredded Chicken (or any meat you like)
  • 8 oz Cream Cheese
  • 1/2 cup Hot Sauce
  • 3/4 cup Ranch Dressing
  • 1 cup shredded cheese to mix in
  • 1 cup shredded cheese for top
  • 8-12 oz pk pasta

Remember, these ingredients can anything you like or have. Chicken, beef or pork all work. The cheese can be the same or mixed, pick your favorites, and the pasta can also be your favorite. Make this your own.

1. Get your pot of water boiling and add your pasta.

2. Mix together the cream cheese, hot sauce and ranch dressing. (don’t be afraid to add anything else you might like)

3. Stir in 1 cup of your favorite shredded cheese.

4. Fold in your chicken, making sure it is well covered.

5. Slowly fold in your pasta, making sure it is mixed well with all the gooey goodness.

6. Prep your baking pan. (I am using cast iron for a special reason)

7. Now fill your pan and try to make the top as level as you can.

8. Top the whole thing with your second cup of cheese.

9. Now it is time to bake at 350 degrees for 25-30 minutes. (now you see why I used the cast iron)

10. Now grab a spoon before you drool all over everything.
